Food Preparation - Individual Assignment

As you have read the chapter in the text and the lesson on line, one thing that is very important in today's food service establishments is sanitation. Your assignment for food preparation area includes the following:

  1. Click on the FOODSERVICE site link. You will find a variety of information here.
  2. Click on the FDA - Bad Bug Book site link.
  3. On either of these sites, find one "bad bug" that can cause food born illness.
  4. Describe the "bug".
  5. What are symptoms these bugs can cause?
  6. How do you prevent this "bug"?
  7. Write a SOP for a restaurant to make employees aware what they should and should not do in order to avoid this problem.
