Evaluate a Food Service Concept

After reading about the components of concept development I would like you to find two foodservice operations to evaluate according to the criteria we discussed in this topic.

1. Choose two food service operations, one independent and one chain restaurant. For each look at the following factors:



Evaluate each factor above for each operation and determine if they are consistent or inconsistent.{You may want to set this up in a table so it is easy to see}

2. Write a paragraph or two for each of the food service operations you evaluated in question one. How do you feel the operation reinforces its concept? What can they do to improve?
