Bar Menu Analysis

Assignment: Collect a drink menu, WITH THE BAR MANAGEMENT'S PERMISSION OF COURSE, from a bar that you find interesting. You can also look for an example of a bar menu on the web, your choice. Compare the menu against the criteria in textbook and class discussions. Answer the following questions in the order they appear below. Organize your paper with the headings being the questions below.

  1. What is the name of the bar? Does the name tell customers what to expect? What type of bar is it; where is it located, what is the concept and target market? Explain your answers.

  2. Is the concept of the bar clear cut or unclear? How does the bar reinforce their concept? Is it sufficient to reinforce the concept or is more needed? Does the concept fit the target market? Does the bar attempt to have multiple concepts? What is the potential problem(s) of a bar having an unclear concept or multiple concepts? Explain your answers.

  3. What type of drink menu does the bar have; limited/unlimited, what selection of mixed and specialty drinks does it offer? What key points on the menu lead you to pick that particular type of menu and what are the advantages and disadvantages to it? Do you feel that the type of menu appeals to the clientele the operation is planning to attract? Explain your answers.

  4. What is your overall impression of the menu? Positive or negative? Is the menu easy to read; does it offer an adequate choice of items? Are the drinks described in adequate detail? What are two potential problems that could arise due to the weaknesses you see in the menu? Explain your answers.

  5. Compare the written menu with the offerings behind the bar, does the menu reflect all items offered? What potential problems could occur if the menu does not adequately reflect the bar's offerings? Explains your answers.

The objective of this assignment is to compare material discussed in class and reading in the text with actual bar operations. The observation and analysis you are doing for this assignment may be similar to some that you may have to do when you take a position in food and beverage management. View the assignment as one that was given to you from your boss and write up the report as if you were writing it for your manager.

You may choose any bar for the assignment. If you regularly visit the valley during the semester, you may find it easier to choose some bars there rather than having the few local Flagstaff bars bombarded with all of the students in the class.

You are required to use a word processor for your report. Your grade will depend on your response, your analysis of the benefits as well as the potential problems that may occur from what you observed the completeness of your answer, and how well you follow directions. Please proofread for spelling and grammatical errors.

Save your report . Send a copy to me, Wallace.Rande@nau.edu
